The following is a VERY simple recipe that allows you to easily make a moist and delicious carrot cake using a blender.
You can whip up this cake in almost the same time as it takes to make a box cake using fresh ingredients that you trust. The taste is amazing.
Add to the Blender:
- 1 bag of baby carrots
- 4 eggs
- 2 cups sugar
- 1 + 1/2 cups olive oi
- 1 tablespoon vanilla
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon of ginger
- 1/4 teaspoon of cardamom
Fully whisk together:
- 2 cups of flour
- 2 teaspoons of baking soda
Mix dry and liquid ingredients and pour into a 11.5 x 9.5 in pan or two 8 inch rounds (for 2 layer cake) and bake at 375˚ for about 40 minutes (pan). When near done test with toothpick to see if it comes out clean). Bake for ~25min before toothpick test on rounds.
For Frosting whisk together:
- 1 block of cream cheese
- 2 cups powered sugar (I use less if want less sweet)
- 2 tablespoons vanilla
- 1/2 stick of warmed butter
